I was thumbing through my landlady's cookbooks looking for recipes to make for July the 4th. This retro cookbook struck my eye. It is for Junior's restaurant in Brooklyn.

Junior's holds a special place in Brooklyn from the very first day they opened their doors in 1950 on the corner of DeKalb and Flatbush Avenue Extension. Three generations of the Rosen family have worked to build their restaurant into one of the most popular eateries in Brooklyn today.

The restaurant still looks like it did in the fifties- bright orange booths, a soda fountain counter and a bakery.
They have expanded to include locations in Times Square and Grand Central. I hope to check out Junior's in the near future to sample their delicious concoctions.
The legendary restaurant is renowned for its rich and creamy cheesecake, but since it is 4th of July I thought I would share a more patriotic recipe for Apple Pie. Happy 4th! Enjoy!
